O'Brien enjoys what she calls a "rainbow breakfast" consisting of scrambled eggs and brightly-colored vegetables. "Eggs are rich in several nutrients that promote heart health, such as betaine and choline," says registered nutritionist Jo Lewin. "A study of nearly half a million people in China suggests that eating one egg a day may reduce the risk of heart disease and stroke, although experts stress that eggs need to be consumed as part of a healthy lifestyle in order to be beneficial."
O'Brien has milk (in glass bottles) delivered every day. "Dairy isn't necessary in the diet for optimal health, but for many people, it is the easiest way to get the calcium, vitamin D, and protein they need to keep their heart, muscles, and bones healthy and functioning properly," says Vasanti Malik, nutrition research scientist with the Harvard T.H. Chan School of Public Health.
One of O'Brien's more unusual winter drinks is Marmite, a savory spread made of yeast which is chock-full of nutrients, mixed into hot water. "Marmite is also high in folic acid, providing nearly 50% of the recommended daily allowance per serving," says nutritionist Shona Wilkinson. "Folic acid works to reduce the risk of high blood pressure, increase the chance of conception and prevent birth defects."
O'Brien loves baking with her family, especially cozy dishes like fruit crumbles with apples and blackberries. "Fruit and vegetable intake are thought to be associated with greater bone density and improved bone health," says registered nutritionist Nicola Shubrook. "Findings from a study on healthy women suggested apples, in particular, may minimize the amount of calcium lost from the body and hence improve bone strength."
O'Brien found it difficult losing weight after having three children—so she got some help, and lost 42 pounds after hiring a personal trainer and following a healthy diet. "It serves me right because I thought, 'I'm naturally slim – it will just drop off!' But it really didn't!" she says. "When I first had Scarlett I did absolutely nothing. I didn't want to be running round the block with a week-old baby!"
